This is a delicious and quick recipe that is super easy to make!
Lots of healthy, yummy greens, nutty flavours and of course, cheeeeeeese!
You will need:
2 cups of spinach leaves / kale
3 cloves garlic
1/3 cup of cashews and walnuts (mixed together)
1 cup of milk
1/2 cup grated cheese (cheddar or parmesan, or both!)
1 big chicken breast (skinless)
1 1/2 cups of penne
chives
onion salt
salt
pepper
olive oil
(Ignore the broccoli in the photo! I didn’t want to use it)
How to make the delicious pasta:
1. Boil water for your pasta in a saucepan. Once boiled, add your pasta. Cook until pasta is soft and puffy.
While you’re cooking your pasta, chop up your chicken breast into bite size pieces. Heat a good-sized pan on a medium heat. Add a table spoon of olive oil and the chicken. Sprinkle with onion salt for flavour and cook until golden.
2. Pasta and chicken aside, it’s time to make your sauce! Put your spinach and kale into a saucepan on a medium heat. Add a dash of olive oil and salt and pepper. Add any amount of chives in that you think you’d like. Your greens will start to shrink as they cook. Add the milk and stir for around 1 minute. Continue stirring as you grate the cheese in over the saucepan – your sauce will thicken as you do this!
3. Once the cheese is melted, transfer over to your food processor. Add in the cashews, walnuts and cloves of garlic. Add more salt, pepper and onion salt if you wish. Blend on the lowest speed. The consistency shouldn’t be runny – the spinach and kale will break into smaller bits and the sauce will become chunky with the nuts. This is what you want!
4. Transfer your sauce back to the saucepan, still on a medium heat. Add in the chicken and stir through, coating the meat in all the gooey-cheesey-kale-spinach goodness. Then add in the pasta and continue to mix. Serve with fresh chives, a few walnuts and a little (or a lot) more grated cheese!
